- Blend
- A mix of coffees from different sources that a roaster combines because the mix can taste better than any one part alone. Roasters also use blends to keep a coffee tasting consistent from batch to batch. Glossary
- Medium-dark roast
- Beans roasted until second crack is close or has started, as in Full City (almost at second crack) and Vienna (mid second crack) roasts. Glossary
- Washed process
- The producer strips the skin and pulp from the coffee cherry, lets microbes break down the sticky mucilage during fermentation, and rinses it off with water before drying the beans. Washed coffees tend to taste clean, with clear acidity. Glossary
- Natural process
- The producer dries the whole coffee cherry with the seed still inside, so the fruit stays on the bean through drying. Naturals often taste sweet and fruity, though uneven ripeness can make them inconsistent. Glossary
- Honey process
- The producer removes the cherry’s skin but dries the bean with some or all of the sticky mucilage still on it. The name comes from that sticky, honey-like feel, and more mucilage left on usually means a sweeter cup. Glossary
