Honey processing first became popular in Costa Rica, where farmers took it up after seeing consistent quality gains, and its use has spread since. In Brazil the usual name is pulped natural, and most Brazilian pulped naturals resemble yellow honey, the style that leaves the least fruit on the seed.
Drying takes care. Workers rake or turn the beans several times an hour for about 6 to 10 hours, then once a day for at least 6 to 8 more days, and the beans take on moisture again overnight. Longer drying raises the chance of fermentation, mold and bacterial defects.
This shelf lists coffees whose roaster names honey or pulped natural processing for the coffee, or for at least one coffee in a blend. Compare them with washed coffee and natural process coffee, or browse Costa Rican coffee.

What is honey process coffee?
Honey processing is a method in which the producer pulps the coffee cherry, removing the skin, and then dries the seed with the mucilage still on its parchment. Mucilage is the sticky fruit layer, and parchment is the papery shell around the seed. Washed coffee loses that layer before drying, and natural coffee dries inside the whole cherry.

No. Perfect Daily Grind says no honey goes into the process, and the coffee does not necessarily taste like honey. The name refers to the sticky, honey-like feel the mucilage gives the beans before they dry.
Source: perfectdailygrind.comWhat is the difference between yellow, red and black honey coffee?
The names track how much mucilage stays on and how the coffee dries. Perfect Daily Grind gives about 25% mucilage for yellow honey, which usually dries fastest with little shade. Red honey keeps about 50% and dries longer under cloud cover or shade. Black honey keeps about 100% and is usually covered to slow drying further.

Perfect Daily Grind says honey processed coffees generally have strong sweetness and a balanced acidity with fruity undertones. Their flavors tend to be less powerful than those of natural coffees, but clearer and more defined.
